So, next to the roasted meat you are gonna cook today, you should absolutely have a salad! And what better salad than a grilled corn salad?! Heat up your grill to 600F or 320C. Shuck the corn and grill them for about 15 minutes or until they are well chard. Let them cool down while you prep the rest of the salad. Cut the red onion in half and slice it as thin as you can. Separate the cilantro leaves from the stalks. Directly in the serving bowl, using a sharp knife, shave the grilled corn off the cob. Crumble the cheese. Add the rest of the ingredients and toss well. Serve next to all your BBQ food.
