Old-School American Chicken Parm Sliders

For the schnitzel: Whisk eggs with mustard and salt. In a separate bowl, mix breadcrumbs with matzo flour, black pepper, and za’atar. Dredge each thigh in flour, dip in the egg mix, then coat fully in the breadcrumb mix. Fry until golden brown. 

To assemble the sliders: Slice open the buns. Layer each bun with a fried schnitzel, a tablespoon of hot honey marinara sauce, and a slice of low moisture mozzarella. Bake at 400F (200C) until the cheese is bubbly and gooey. Top with the bun and serve hot.
