A quick and comforting one-pot Pea Ptitim dish that comes together in 20 minutes, perfect for lunch and leaning into the season of fresh peas. It's bright and flavorful.
In a medium pot or Dutch oven, heat the butter and olive oil over medium-high heat. Add the garlic, preserved lemon, and jalapeño and cook until softened, 1 to 2 minutes. Stir in the ptitim, followed by the peas, water, Osem consomme, and 2 heavy pinches each of salt and pepper. Bring to a simmer and cook, reducing the heat to maintain a simmer and stirring often, until all the liquid is absorbed, about 13 to 15 minutes. Remove from the heat and stir in the parm and dill, then taste and adjust the seasoning with salt and pepper. Divide between and garnish with mint, chive and oregano blossoms, and lemon zest, if using, then serve.
